By Michael Pollan, Featured in Outside Magazine – August 1, 2026
In this month’s issue of Outside Magazine, we are thrilled to feature an interview with Michael Pollan, the acclaimed journalist and author renowned for his insights into food, nature, and sustainability. Today, he shares his conversation with Maria Folino, a passionate advocate for regenerative living and holistic health.
Maria, known for her tireless dedication to fostering sustainable communities and enhancing the connection between people and nature, embodies the essence of a true health enthusiast. Join us as Michael delves into Maria’s inspiring journey and the transformative work being done at the newly opened High Falls Nature Retreat Centre, a sanctuary dedicated to achieving optimal health for all ages.
Scene as described by Michael Pollan: It’s a fresh, sun-dappled August morning as I meet Maria Folino at the entrance of the High Falls Nature Retreat Centre, nestled deep in the Muskoka woods. The air is crisp and alive with the scent of pine and cedar, while the distant sound of the waterfall provides a soothing backdrop.
With a warm welcome, Maria leads me to the base of the magnificent High Falls, where the powerful cascade tumbles over the rocks, creating a mesmerizing spray that catches the light like tiny diamonds. There is an air of exhilaration knowing that this stunning landscape is not only a natural wonder but also a testament to the restorative work that has been undertaken here.
After soaking in the beauty of the falls, we embark on a leisurely kayak trip down the river. Maria enthusiastically points out the various restoration projects lining the shoreline—the vibrant colors of the landscape seem to come alive, reflecting the commitment to environmental stewardship that is at the heart of the retreat center’s mission.
As they continue their leisurely paddle, Maria paints a vivid picture of the cabin and greenhouse concept blossoming across the property.
“Each cabin serves as a cozy sanctuary for families and individuals seeking a deeper connection with nature,” she shares, her enthusiasm shining through. “But these are more than just places to stay; they are integral to our community initiative, which is built on the sustainable pillars of environmental integrity, financial resilience, and social cohesion.
“The strategically placed greenhouses will provide year-round access to fresh, organic produce while also functioning as educational hubs for our various programs. It’s essential that our food sources are cultivated using regenerative practices to ensure we secure the most nutritious, clean food available.
“This initiative fosters collaboration among community members, encouraging them to share resources and skills, thereby strengthening our bonds and nurturing a thriving, resilient ecosystem.
“I envision families coming together to share meals crafted from their own harvests, creating lasting memories in this harmonious environment that prioritizes health, sustainability, and connection to the land.”
Maria continues, “Our community has always been passionate about soil regeneration, which is a cornerstone of our work here and beyond. We’re working with farmers across the province, helping them regenerate their soil for local food production. Not only does that help us maintain a thriving local food system, but it also keeps our local economy strong and resilient.”
As they glide along, Maria shares her excitement about the Stewardship Program designed for youth, aimed at engaging them in land and soil restoration efforts. “It’s so important to get the next generation involved,” she explains, her voice filled with passion.
“This program empowers them to take ownership of their environment and understand the significance of caring for our natural resources. I truly believe that instilling this sense of responsibility in our youth is essential for building a sustainable future.”
The breathtaking scenery surrounding them serves as a perfect backdrop for their discussion, embodying the harmony between nature and the community’s dedicated efforts to heal the land.
Michael: “The serenity here is remarkable, Maria. I understand that you’ve built a strong network around sustainable communities. How did that all begin?”
Maria: “It all started when I connected with a few core individuals who were already dedicated to creating regenerative sustainable communities and raising funds to support this vision. From there, I engaged in grassroots fundraising efforts, which have continued to grow. “
“As we prepare for more retreat locations and soil regeneration projects across farming communities globally, the support from our community has been incredible.”
Returning to the main beach, they turn their focus back to a hike along the trail towards Whale Rock, a majestic natural stone formation along the wooded path.
Michael: “This rock formation is incredible, and the falls seem to cast a calming spell over the whole area. Do families spend a lot of time here?”
Maria: “They do! It’s one of the most popular spots, especially for families,” she says, her eyes lighting up. “There’s something magical about it. Plus, fun fact—there are no mosquitoes in this area by the falls. We think it might be because of the constant vibration of the water. Whatever the reason, it’s made this spot a favorite for picnics and relaxation.”
As they walk further, Maria talks about the importance of water therapy in the retreat’s programs.
Maria: “Water plays a central role in everything we do here. Whether it’s kayaking or simply being near the falls, there’s something profoundly healing about it.
“And our Outdoor Spa really brings that connection full circle, offering cold-water plunges, natural hot stone baths, and year-round spa treatments. There is something incredibly soothing about sitting in a hot tub, watching the snow fall all around you.”
They return to shore and walk to the Animal Sanctuary, where horses and other rescued animals graze peacefully. The soft whinnying of the horses greets them as they approach the paddock, and Maria’s face softens as she gently strokes a chestnut mare’s mane.
Michael: “It must be rewarding to see people connect with these animals.”
Maria: “It’s one of the most rewarding parts of this work,” she says, her voice gentle. “People can learn so much from these animals. Horses, in particular, are incredibly grounding — they live so fully in the present.”
They linger in the field, the warmth of the late summer sun on their backs, the scent of hay mingling with wildflowers. The gentle rhythm of the horses’ breathing and the quiet rustling of leaves overhead create a deeply calming atmosphere.
After some time with the horses, Maria leads them back to the retreat center. Inside, the transition from outdoor experiences to personal transformation begins.
Maria: “We’ve found that after spending time in nature or with the animals, many of our guests are ready to go deeper into self-reflection. We offer a time for Self-Exploration, where people can begin to discover their true selves—who they are at their core—and explore their life missions. It’s a journey of understanding and aligning with your dreams.”
Michael Pollan: “What kind of experiences are offered here?”
Maria Folino: “For those eager to immerse themselves, we offer a Personal Journey designed for individuals ready to undertake serious personal growth. Over the course of six months, participants engage in guided self-exploration, set meaningful goals, and identify the steps needed to transform their dreams into reality.
“It’s an intense experience, but one that can be truly life-changing. The brilliant part is that the in-nature component of the program can be done anywhere in nature, making it convenient to participate from wherever they are.
“People from all walks of life benefit from this program—teenagers exploring their paths, home-schooling families, professionals seeking a career change, and anyone feeling a calling toward a greater purpose.”
As they finish their tour, the sounds of families playing in the lake and exploring the forest trails fill the air. High Falls Nature Retreat is truly a place for everyone—whether you’re a solo traveler seeking peace, a family looking to reconnect with nature, or someone ready for deep personal transformation.
With plans to build more retreat centers globally, Maria and her community are just getting started. Thanks to the collective spirit and vision of everyone involved, they are building a movement that blends healing, personal growth, and sustainability, all while helping local communities thrive through initiatives like soil regeneration and sustainable farming practices.
Michael Pollan: “Maria, it’s truly inspiring to see how you embody the principles of True Health in everything you do. You’re not just talking about these ideas; you’re living them and leading by example. Your commitment to creating a legacy of health for both people and the planet is a remarkable gift to the community. Thank you for sharing your vision and passion with us today.”
Maria Folino: “Thank you so much, Michael. It’s truly an honor to have you here and to share this vision with someone who has such a profound impact on how we think about food, health, and sustainability.
“I’d love to extend an invitation to you and your family to join us this evening by the fireplace hearth. It’s a special time when we all gather, break bread, and enjoy each other’s company. Your presence would add to the warmth of the evening, and I’d be thrilled to share more stories and experiences with you.”
Michael Pollan: “Thank you, Maria. That sounds wonderful. I’d be honored to join you and your family for dinner. It’s been a pleasure to learn about your work and the incredible community you’ve built here.
Maria smiles at me, her eyes sparkling with enthusiasm as she gestures for me to take a seat. “We believe that sharing a meal is one of the best ways to connect and cultivate community. It’s about nourishing our bodies and our spirits together,” she explains, her passion palpable.
Settling in, I can feel the conversations around us blending into a comforting hum. Maria introduces me to various guests, each sharing their own journey and connection to the retreat. From families finding solace in nature to individuals seeking personal transformation, their stories weave a rich tapestry of experiences that embody the retreat’s mission.
I listen intently, soaking in the spirit of this vibrant community. It strikes me how the High Falls Nature Retreat Centre stands as a beacon of hope and healing, showcasing what can be achieved when people unite with a shared vision. It’s clear to me that this place is not merely a retreat; it is a thriving ecosystem of support, growth, and sustainability.
As the evening unfolds, laughter resonates more deeply, and the warmth of the fire wraps around us like a comforting blanket. Filled with gratitude, I realize that this gathering is more than just a meal; it’s a celebration of life, connection, and the profound impact of living in harmony with nature.
After dinner, as guests begin to share their stories around the fire, I turn to Maria. “This community is truly special. It’s evident that your passion for regenerative living has inspired so many. What’s next on the horizon for High Falls?” I ask, genuinely curious.
Maria leans back, her expression shifting to one of contemplation, yet a glimmer of hope dances in her eyes. “We have exciting plans ahead. As we expand our reach, we aim to develop more retreat centers and educational programs that empower communities worldwide.
“Our goal is not only to provide a sanctuary for personal growth but to foster a global movement focused on sustainability, healing, and connection to nature.”
With the crackling fire casting flickering shadows on our faces, I share a moment of understanding with Maria—a shared vision for a better future rooted in health, community, and a deep respect for the natural world. As the stars twinkle overhead, I feel that this evening marks just the beginning of a much larger journey toward transformative change.
